The remnants of my Friday night lahmacun, chips and salad I thought had definite potential on Saturday morning. I took the leftover chips and salad and gave them a quick chop, broke a couple of large eggs whisked them up and poured over leftovers to make a frittata in a small frying pan. I also grated a bit of parmesan over the top halfway through. I don’t normally have much success with frittatas but it seemed to hold together in a miraculously neat little package. Warming to my theme I transferred it back to the same plate I used the night before. Gave my innards respite and didn’t use chilli sauce again but just added some ketchup on the side. All in all worked a treat.

Whisk eggs and melt butter in small frying pan
